1 block cream cheese, softened
3/4 cup coconut flour
1/2 tsp. pure vanilla extract
1 tsp. cinnamon
1/4 tsp. ground nutmeg
1 cup grated carrots
1/2 cup chopped pecans
1 cup shredded unsweetened coconut


1. In a large bowl, using a hand mixer or food processor, beat together cream cheese, coconut flour, vanilla, cinnamon, and nutmeg. Fold in carrots
and pecans.

2. Roll into 16 balls then roll in shredded coconut and serve.
