Salmon:

Ingredients:

500g salmon fillet

Pink Himalayan rock salt

Freshly ground black pepper

4 tbsp melted butter

1/4 cup freshly grated Parmesan

2 garlic cloves, minced

2 tbsp freshly chopped parsley

1 large fresh lemon

Method:

Preheat oven to 180°C.
Line a large baking tray with baking paper and lightly grease with butter. Place salmon fillets on top and season with salt and pepper.

2. In a small mixing bowl, mix melted butter, Parmesan, and parsley.
Coat the salmon with an even layer of the mixture. 

3. Bake in the oven until the salmon is cooked through, approximately 25 minutes.

Chips:

Ingredients:

750 g orange sweet potato, peeled

3 teaspoons olive oil

½ teaspoon paprika

Freshly ground black pepper

Method:

  1. Preheat the oven to 230°C.
    Line a large baking tray with baking paper. 
  2. Cut the sweet potatoes in half crosswise, then length ways into 1-cm-wide wedges/chips.
  3. Toss the sweet potato in oil, paprika and pepper in a small bowl 
  4. Place on the prepared baking tray.
  5. Bake the sweet potatoes in the oven for 20-25 minutes, turning the chips/wedges over a few times until they are golden-brown in colour.

*Note: An air fryer can also be used to cook the chips for same time and temperature as conventional fan forced oven.
